The World of Aqua : Earthly Origins : Inarizushi
Inarizushi
Inarizushi is one of the simplest sushi to make. Most of the ingredients can be found at big supermarkets, though you might need to go to an Asian grocery store for the abura-age.
Ingredients:
1 cup sushi rice
1/3 cup rice vinegar
1 tsp sugar
1/4 tsp salt
2 tsp toasted sesame seeds
1 can Inarizushi abura-age
Method:
Add the sugar and salt to the vinegar and heat until the sugar and salt have melted. Allow to cool. (You can also find readymade sushi rice vinegar at certain stores. Much easier.)
Cook the rice according to directions. When the rice is done, turn it out into a large flat pan. Dip a rice ladle (or a spatula if you don't have one) in cold water and spread out the rice evenly while fluffing it up to loosen the grains. You may have to dip the rice ladle in cold water several times to prevent the rice sticking. Do not flatten the rice. When the rice is in an even layer, sprinkle the sesame seeds evenly over the rice.
To add the vinegar, hold the rice ladle bowl side down about an inch above the rice mixture. While shaking the ladle from side to side, dribble the vinegar over the back of the ladle, moving it up and down over the entire surface of the rice. This helps to distribute the vinegar evenly.
When you have added all the vinegar, stir up the rice to coat it evenly. Again be careful not to flatten the grains. Set the rice aside to cool a little more
Open the can of inarizushi abura-age.
WASH YOUR HANDS.
Open each abura-age carefully on one wide end to form a pouch. Set them on a plate with the open side up.
WASH YOUR HANDS AGAIN.
Rinse your clean hands in cold water (it's handy to keep a bowl of clean cold water nearby to dip your hands when they get sticky). Take about 2 tablespoons of rice in your palm and squish it together gently into a ball. Place this ball of rice into an inarizushi pouch and gently press the pouch till the rice is molded to the shape of the pouch. Depending on the size of the pouches, you can adjust the amount of rice. The pouches should be full to the top but not overfilled.
